Recipe: Apple Pecan Cheesecake

  • 1-1/2 cups graham cracker crumbs
  • 1/4 cup butter, melted
  • 1-1/2 cups packed brown sugar
  • 2 Tbsp brown sugar
  • 1 tsp vanilla
  • 1 cup sour cream
  • 4 cups peeled and chopped apples
  • 3/4 cup chopped pecans
  • 1 tsp ground cinnamon

Heat oven to 325 degrees, line 13×9 baking pan with foil. Mix crumbs, butter and 2 Tbsp brown sugar, press onto bottom of pan. Bake 10 min.

Beat cream cheese, 1 cup brown sugar and vanilla with mixer until blended. Add sour cream, blend. Add eggs one at a time, mixing on low speed after each egg until just blended. Pour over crumbs.

Mix remaining 1/2 cup brown sugar, apples, pecans and cinnamon, spoon over batter.

Bake 1 hour, cool. Refrigerate 4 hours. Use foil to lift cheesecake from pan before cutting to serve.

Makes 16 servings.

Happy New Year!

I am sure you have read that a million times already, but I just wanted to be sure that we didn’t forget to wish you as well.

I am very excited about the new year and what it will bring. I plan on adding several new products to our website that I am sure you will just love. I have taken some customer ideas along with my own and created several new caramel apple styles, stay tuned as they will be appearing here on the blog soon.

I am happy that the holiday season is now over and I can get back to work (not that I wasn’t working during the holiday season). I have many ideas and improvements to add to the website, many have come from you our valued customers. Please keep an eye on this blog as I will be posting here when I make new improvements.

The holiday season was a very busy time and being that it was my first season here at Monster Candy Apples I think it went well. There were a couple of issues with shipping and packaging that I am addressing for future orders, but all in all I think it was a great success.
